I made lasagna cupcakes this week. I found out about these little gems from Cup of Jo and she found them here. I don't tackle dinner very often but these guys were just too cute to pass up. I'm a sucker for a cupcake shape. I would make them again, maybe add a little more sauce and Josh recommended mixing the ricotta with cottage cheese in the next go around. Don't be fooled by their size, they're filling little buggers.

Do you actually use little cupcake tins? They look bigger than that.
